A classic of Christmas baking. Soft, moist gingerbread with roasted hazelnuts. According to an ancient family recipe . 

Contents: 425 g

  1. Pour the baking mix into a large bowl and stir thoroughly.
  2. Add 100 g of honey and 1 egg.
  3. Knead everything well until a smooth ball of dough is formed.
  4. Let the gingerbread dough rest in the refrigerator overnight.
  5. The next day, preheat the oven to 170°C (top/bottom heat).
  6. Roll out the dough on a floured surface to a thickness of 3-4 mm, cut out cookies and brush with egg yolk before baking.
  7. Bake gingerbread at 170°C for approx. 8–10 min.

Rye flour, cane sugar, hazelnuts, baking soda (leavening agent: sodium hydrogen carbonate), gingerbread spice (cinnamon, nutmeg, coriander, ginger, fennel, cloves, allspice, anise, star anise, pepper, cardamom seed)

100g honey, 1 egg, 1 egg yolk for brushing
