An absolute classic Christmas cookie in Austria. Linzer cookies are made from shortcrust pastry and traditionally filled with redcurrant jam .

They are also often called rascals.

Pour the baking mix into a large bowl and stir thoroughly.
Add 2 egg yolks and 200 g of diced butter and knead well until a smooth dough is formed.
Let the dough rest, covered, in the refrigerator for 1 hour.
Preheat oven to 180°C (top/bottom heat).
Roll out the dough to a thickness of 1-2 mm. Cut out the top halves of the cookies with holes and the bottom halves without holes. Bake the cookies on a baking sheet lined with parchment paper for about 10 minutes.
Spread the biscuit bases with jam, place the top halves of the biscuits on top and sprinkle with powdered sugar.
