An absolute classic Christmas cookie in Austria. Linzer cookies are made from shortcrust pastry and traditionally filled with redcurrant jam .

They are also often called rascals. 

  1. Pour the baking mix into a large bowl and stir thoroughly.
  2. Add 2 egg yolks and 200 g of diced butter and knead well until a smooth dough is formed.
  3. Let the dough rest, covered, in the refrigerator for 1 hour.
  4. Preheat oven to 180°C (top/bottom heat).
  5. Roll out the dough to a thickness of 1-2 mm. Cut out the top halves of the cookies with holes and the bottom halves without holes. Bake the cookies on a baking sheet lined with parchment paper for about 10 minutes.
  6. Spread the biscuit bases with jam, place the top halves of the biscuits on top and sprinkle with powdered sugar.
