Heavenly fluffy, velvety soft, tender and sweet. That's our typical Austrian Kaiserschmarrn. Let it melt on your tongue.

Pour the baking mix into a large bowl and stir thoroughly.
Separate 4 eggs and beat the egg whites into a stiff meringue.
Add 300 g of milk and the 4 egg yolks to the baking mix, stir well and gently fold in the egg whites.
Melt 1 tbsp butter in a pan and pour in the mixture. Bake golden brown over medium heat. Divide the dough into 4 parts and turn each part over. Bake golden brown again. Once the dough is well baked on both sides, tear it into small pieces with 2 forks.
Let the Kaiserschmarrn sit covered on the turned-off stove for another 10 minutes. This will make it fluffy and light.
Sprinkle with powdered sugar and serve with compote, if desired.
